02. DIY Plant-Based Supper
Hey Friends,
Happy Sunday I hope you had a good week :) If we're just meeting, hi there! We are Courtney and Jessica, two cousins with limited cooking experience who spontaneously started a supper club back in 2019 when we invited friends, old and new, to share a meal. Although each meal was different, the time and the place remained the same—an open invitation for whoever needed it.
This week is our first official DIY project newsletter! We themed this week after a chef that is always talked about in our family, whose cookbooks are constantly in rotation and has a song named after him: Yotam Ottolenghi. Here’s the song if anyone wants to listen to it. 10/10 would recommend. You might have noticed it’s in our playlist.
But to take it back to 2019, on Wednesdays, we used to gather in apartment 26K to cook and eat dinner together. Some of the best meals were the ones that were very casual - usually consisting of anything quick to put together. Roast veggies of any kind always made an appearance, especially as we had a few vegetarians in our regular crew.
In honor of those Wednesday night meals, we put together an easy game plan, perfect for after a day of work, for three Ottolenghi veggie dishes, resulting in a nourishing dinner set to feed 4 and put a spin on seasonal and budget-friendly veggies.
